We have a "bumper" crop of everything this year and carrots is no exception. We pulled them yesterday because of a fear of frost and lo and behold, ended up with 18 trays of those lovely looking veggies. Must be the wonderful Newfoundland weather we have plus the composted kelp and of course, the hard work and green thumb of my husband, Tom...notice I didn't include myself in the "green thumb"...
We also pulled the beets and guess what? We are pickling beets today. There is just no end in sight. I'll never get at my hooking...... grrrr!!!
when you say carrot's.. you mean CARROT'S. I see beef stew in the making. Along with carrot cake for desert.

ReplyDeleteI am baking carrots as I write this. and one of my favorite ways to have carrots is to grind them add raisins and a little mayo. yummmmm kinda like coleslaw.

Wow that is so amazing. They look yummy. I agree with our friend acorn hollow, carrot salad is delicious especially if you add a little fresh pineapple. I'm probably preaching to the choir, with the amount of carrots you grow you must know every carrot recipe in the carrot world. Enjoy the fruits of your labor!!!
